Jauja is the benchmark for artisan ice cream and gastronomy in El Bolsón, with over four decades of history at the same address: Av. San Martín 2867, in the centre of the city. It was founded in 1982 by Lucía Adler and José “Pepe” Mazzini, who transformed what began as a sandwich shop and home-made ice cream outlet into a space with in-house production of ice cream, chocolates, alfajores, and a full restaurant.

The artisan ice creams are made with fruits from the comarca: strawberries, raspberries, redcurrants, and blackberries, alongside chocolates of varying intensities, multiple versions of dulce de leche, and preparations with walnuts, almonds, praline, and house-made fillings. In summer, seasonal flavours are added depending on the availability of local fruit. The chocolates and alfajores are produced at Jauja’s own factory in El Bolsón.

The restaurant and café, in the same space as the Casa Central, is where it all began: in the early years it operated alongside the ice cream shop as a simple, homestyle offering. Today the menu combines midday options with coffee and the full line of Jauja products. There are no restaurant branches outside El Bolsón.

The business is now run by Camilo Mazzini, son of the founders, and his wife Isabel, with the same artisan approach that Lucía and Pepe established from the start. In May 2024, Pepe Mazzini passed away; his legacy lives on in every flavour.
