Orno
Restaurant in Palermo specialising in long-fermentation pizzas and dishes from porteña cuisine.
Located in the heart of Palermo, on Guatemala street, Orno presents itself as an italo-porteña cantina that seeks to reinterpret classics from both cultures. The venue operates under a concept of creative fusion, where the tradition of criolla cuisine and Italian techniques meet to offer a modern proposition. The structure stands out for its architectural design, with a glass pavilion that emerges behind a traditional neighbourhood façade. This space is surrounded by a garden that helps disconnect the atmosphere from the surrounding urban rhythm, creating its own ambience within Palermo’s dense urban fabric.
Culinary proposition and produce
The culinary identity of the venue centres on the reinvention of emblematic dishes. Its speciality is Neapolitan and Detroit-style pizzas, made with a dough that undergoes a 72-hour fermentation process to achieve specific textures. The menu integrates elements of porteña cuisine, including milanesas, empanadas and charcuterie, using produce from the restaurant’s own kitchen gardens and local suppliers. This attention to origin extends to other dishes such as pastas, maintaining a focus on the quality of fresh ingredients.
Atmosphere and experience
The spatial design, developed in collaboration with Adamo-Faiden, uses concrete volumes to organise the kitchen, bathroom and entrance areas, adding layers of privacy within an open floor plan. The experience unfolds around an open kitchen that allows diners to observe the work in front of the wood-fired oven, adding a dynamic visual element to the meal. The atmosphere is rounded out by the bar Cima, a rooftop bar serving signature cocktails. Depending on the day, the pace of the venue can range from a quiet dinner to more lively events, such as the karaoke or Drag Bingo nights that take place on Thursdays and Fridays.
Integration in the neighbourhood
Orno fits into Palermo’s current identity as a destination that combines architectural sophistication with street culture. By offering both a solid culinary proposition and a space for social gathering, the venue functions as a pause within the urban itinerary. The combination of a private garden, a glass pavilion and an offering that spans from the classic to the experimental positions it as an option for those looking to explore new trends in porteña gastronomy without losing sight of the roots of traditional cuisine.
